A charcoal kettle on a proper cart, which turns a simple design into something you can cook on seriously. The bowl and lid are heavy gauge black porcelain and hold heat well; the cart adds a folding stainless steel side shelf for prep and locking castors for moving it.

The cooking area is 365 square inches, 2,340 square centimetres, 21.5 inches across, enough for around 22 burgers. The grids are hinged porcelainised cast iron, so you can add charcoal or wood mid-cook without lifting food off. A removable heavy steel ash catcher with an air control system regulates how much oxygen reaches the coals, which is how you control the temperature, and a stainless steel heat diffuser is included for indirect roasting and convection. The lid is hinged so it stays off the ground and out of the way, and an Accu-Probe gauge reads the temperature.
