The 22 inch Smokey Mountain is the size to buy if you smoke for numbers: two plated steel cooking grates take multiple roasts at once, enough for a large family or an annual gathering, and the extra-large water pan holds enough water to stabilise the temperature through an all-day cook.

That water pan is the point of a bullet smoker. It buffers the heat, keeps the chamber humid and makes holding a low temperature for eight or ten hours straightforward rather than a constant fight. The bowl, lid, centre section and water pan are all porcelain-enamelled, the charcoal grate is heavy-gauge steel, and a charcoal chamber keeps fuel where it should be. A rust-resistant aluminium fuel door lets you top up without dismantling anything, a silicone grommet takes a temperature probe lead, and a lid thermometer reads the chamber. A cover is included.
